I usually just add the polyline or point layer (ignore the warning about no projection). Then I right-click on the layer and select "convert to feature dataset". The tool requires you to browse to an existing file geodatabase and to select the projection. All feature attributes are visible. If you really want shapefiles you could save each of the feature dataset layers as shapefiles.
